  3. Peel and finely chop the onion and carrot.
  4. Heat the oil in a deep pan or cauldron, fry the onion until translucent, add the carrots and simmer until ready.
  5. Add eggplants, tomatoes, salt, pepper and vinegar to the vegetables. Simmer over low heat with the lid on for 40-50 minutes, stirring occasionally.
  6. We spread the finished caviar in sterilized jars and roll it up. Store in a cool and dark place.
