Ukrainian Cottage Cheese Casserole
A gently baked tvorog casserole with semolina, eggs, sour cream and vanilla.
This casserole draws on the original tvorog recipe, which uses 500 grams of curd cheese, three eggs and three tablespoons semolina. Tvorog is a drier cultured curd than many tubs labeled cottage cheese internationally; if yours is wet, drain it first so the casserole does not turn loose. Blend or mash grainy curds for a smoother slice. Stir in sugar, vanilla, eggs, sour cream and baking powder, then leave the semolina in the mixture for fifteen minutes to absorb moisture. Bake in a buttered dish until golden with a mostly set center, and rest before cutting. Raisins or chopped dried apricots are optional. Serve warm with plain yogurt or chilled with berries.
