These vegetarian quesadillas fill warm tortillas with mashed black beans, melted cheese, corn, pepper, spinach and tomato. Drain juicy ingredients well so the tortillas crisp instead of steaming. Cook each folded quesadilla over medium heat and press gently until the cheese melts and both sides are browned. Serve with salsa for dipping.
