Bibimbap is a Korean rice bowl served with vegetables, savoury seasoning and a spicy sauce. This vegan version uses rice, sautéed mushrooms, carrot, spinach and cucumber, with tofu for extra substance and gochujang for the familiar chilli note. Cook each vegetable separately where practical so its colour and texture remain distinct, then arrange everything over warm rice. Gochujang varies in heat and salt, so start with a small amount and add more at the table. The bowl is assembled just before eating for the best contrast. Rinse rice until water runs mostly clear. Cook according to package directions and keep warm. Pat tofu dry. Pan-fry in 1 tablespoon oil until golden on several sides; add 1 tablespoon soy sauce and toss. Set aside.
