Prepare the tomato sauce
Heat oven to 190°C/375°F conventional. Warm oil in a saucepan over medium-low heat, soften garlic 30 seconds, then add passata, oregano and sauce salt. Simmer 5 minutes and set aside.
Mix and portion filling
Squeeze spinach dry and chop finely. Mix with ricotta, 40 g grated cheese, egg, filling salt, pepper and nutmeg. Put in a piping bag with a wide opening, or use a teaspoon to fill the tubes. Divide evenly among 12 tubes.
Make béchamel
Melt butter in the saucepan over medium-low heat. Stir in flour and cook 1 minute. Whisk in milk gradually until smooth, then simmer 3–5 minutes, stirring, until lightly thickened. Add béchamel salt.
Assemble
Spread half the tomato sauce across the dish. Arrange filled tubes in one layer. Cover with remaining tomato sauce and all the béchamel, making sure every tube is covered. Sprinkle remaining 20 g cheese and cover with foil.
Bake and rest
Bake covered 25 minutes, then uncover and bake 10–15 minutes until bubbling and lightly golden. A knife should enter the pasta without resistance and the center should reach 74°C/165°F. If still firm, cover and bake longer. Rest 10 minutes before serving.
