This chicken and rice soup simmers chicken with carrot, onion, potato and bay leaf in a clear broth. The source does not give a liquid amount, so this version specifies stock and cooks the rice separately to keep leftovers from becoming too thick. Cut vegetables evenly and add cooked rice near the end. Finish with dill or parsley and a spoonful of sour cream if desired. Rinse rice and simmer separately in salted water until just tender. Drain and set aside. Add stock, chicken, onion, carrot, potatoes and bay leaves to a soup pot. Bring to a gentle simmer. Simmer 18 to 22 minutes, skimming foam as needed, until chicken reaches 74°C (165°F) and potatoes are tender.
