This Sicilian-inspired caponata combines browned eggplant with onion, bell pepper, tomato, capers and vinegar. Cook the vegetables until tender, then let the dish rest briefly so its sweet-sour flavors come together. Heat 1 tablespoon oil in a wide skillet. Cook eggplant in batches until browned and tender; add more oil if needed. Transfer to a plate. Add remaining oil. Cook onions and peppers 8 to 10 minutes until soft. Stir in tomato paste with 60 ml water. Add capers and cook 3 minutes. Return eggplant to skillet. Stir in vinegar, salt and pepper; simmer 5 minutes. Cool 10 minutes and garnish with parsley. Serve warm or at room temperature.
