The old-fashioned “little nuts” in this post refer to their molded shape, not chopped nuts in the dough. Its ingredients list 200 grams of smalets, or rendered lard, with flour, sugar and eggs. Work the fat and sugar together, add eggs, then mix in flour until the dough can be rolled into small portions. The source says to “quench” a teaspoon of soda with vinegar but gives no vinegar quantity; add a measured teaspoon so that instruction can be followed. Press small pieces into a walnut-shell mold without overfilling and cook according to the mold’s stovetop or oven instructions until golden. The post does not provide a filling formula, so this card makes the shells only; fill them separately if you have a trusted filling recipe.
