Napoleon layers crisp, flaky pastry with a thick vanilla custard, then rests overnight until tender. Roll the dough very thin and bake the layers separately; chill the assembled cake long enough for the custard to soften them. Rub cold butter into flour and salt until coarse crumbs form. Whisk 2 eggs with cold water, add to flour and mix just until dough comes together. Chill 40 minutes. Heat oven to 200°C (400°F). Divide dough into 8 portions, roll each paper-thin and bake separately 8 to 10 minutes until pale gold. Save crumbs from trimming. Heat milk until steaming. Whisk 4 eggs, sugar and cornstarch. Slowly whisk in hot milk, return to saucepan and cook while whisking until thick and bubbling. Remove from heat; stir in vanilla and butter. Cool with wrap on surface.
