Sochniki are tender folded pastries filled with sweet cottage cheese and raisins. The source gives a complete dough and filling but leaves out shaping and baking steps; this version uses the familiar half-moon fold, leaving the filling visible at the edges. Chill the dough before rolling and avoid overfilling so the pastries stay neat. Bake until lightly golden, then cool briefly before serving. They are lovely with tea or as a simple breakfast pastry. Beat butter with 150 g sugar and vanilla sugar. Beat in 2 eggs and salt. Stir in flour and baking powder to make a soft dough. Wrap and chill 30 minutes. Mix cottage cheese, 100 g sugar, one egg and vanilla sugar until combined. Fold in raisins.
