This raspberry cheesecake has a separate berry syrup poured over the finished slices; the original does not swirl purée through the filling. Press crushed cookies with melted butter into the pan, then blend cream cheese, sugar and sour cream until smooth. Add four eggs gently, one by one, to avoid excessive air. Bake at 160°C until the edges are set and the center still has a slight wobble; it firms up as it cools. Simmer raspberries with a little water and sugar for the sauce, cool it and spoon it over cold cheesecake. Give the cake enough refrigerator time to slice neatly.

Mix cookie crumbs, melted butter and 2 tbsp sugar; press into a lined 23 cm springform pan.

  4. Cook syrup

Simmer raspberries, 0.25 cup sugar and 2 tbsp water until berries soften and liquid is spoonable; cool completely.
