Apple Puff Pastry Turnovers with Cinnamon and Lemon
Flaky puff pastry parcels filled with cinnamon apples and a hint of lemon.
These apple turnovers use ready-made puff pastry folded around a cinnamon apple filling. Briefly cook the apples first to remove excess moisture, then cool them before filling so the pastry stays flaky. Keep the pastry cold while shaping and seal the edges with a fork. Brush with egg yolk for a deep golden finish and bake until the layers are fully puffed and crisp. Place apples, sugar, cinnamon and lemon juice in a saucepan. Cook over medium heat 5 to 7 minutes until just tender. Mix cornstarch with water, stir into apples and cook 1 minute until glossy. Cool completely. Heat oven to 200°C (400°F). Line a baking tray. Cut pastry into 8 squares and keep chilled.
