Jump to Recipe

Kulfi is a dense, creamy Indian frozen dessert traditionally made by reducing milk slowly. The source combines whole milk and condensed milk, then adds sugar and milk powder, making the result excessively sweet and heavy. This balanced version uses milk, a modest amount of condensed milk, cardamom, pistachios and a pinch of saffron. Simmer gently until slightly reduced, cool completely and freeze in small moulds so the portions set evenly. Unlike churned ice cream, kulfi is meant to be firm and rich. Unmould briefly under warm water just before serving. Soak saffron in 1 tbsp warm milk for 5 minutes. Pour 1 litre milk into a heavy saucepan. Bring to a gentle simmer, stirring often, and reduce by about one quarter, 20 to 25 minutes.
