Classic flan pairs a delicate baked custard with a thin amber caramel. Melt the sugar carefully, then pour it into the mould before it hardens. Whisk eggs gently so the custard stays smooth rather than foamy, and strain the mixture before baking. A water bath cushions the heat and helps the centre set without curdling. Chill the flan thoroughly before unmoulding so the caramel can flow over the top. The recipe uses a thermometer for the egg-based custard and avoids rushing the cooling step. Heat 150 g sugar and water in a small saucepan without stirring until deep amber. Carefully pour into a 1-litre flan mould and swirl to coat the base. Heat milk until steaming but not boiling. Whisk eggs with 90 g sugar, vanilla and salt just until combined.

Instructions

  1. Make caramel

Heat 150 g sugar and water in a small saucepan without stirring until deep amber. Carefully pour into a 1-litre flan mould and swirl to coat the base.

  2. Warm milk

Heat milk until steaming but not boiling. Whisk eggs with 90 g sugar, vanilla and salt just until combined.

  3. Combine custard

Gradually whisk warm milk into eggs. Strain into caramel-lined mould.

  4. Bake in water bath

Set mould in a roasting pan and add hot water halfway up its sides. Bake at 160°C (325°F) for 45 to 60 minutes until the centre reaches 71°C (160°F) and still trembles slightly.

  5. Chill and unmould

Cool, cover and refrigerate at least 4 hours. Run a thin knife around edge, dip mould briefly in warm water and invert onto a plate.
