Cottage Cheese Goose-Foot Cookies
Tender cottage-cheese cookies folded with sugar into traditional goose-foot shapes.
Goose-foot cookies are folded cottage-cheese pastries coated in sugar and baked until lightly crisp outside and tender within. The source lists cottage cheese, butter, egg, flour and baking powder; this version uses the classic fold-and-sugar shaping method. Drain very wet cottage cheese first and chill the dough so the rounds are easy to handle. Press one side into sugar, fold twice and cut a small slit at the edge to suggest a goose foot. Mash cottage cheese with butter until mostly smooth. Mix in egg, vanilla and salt. Stir in flour and baking powder until a soft dough forms. Cover and chill dough 30 minutes. Heat oven to 180°C (350°F) and line a tray. Roll dough to 4 mm thick and cut 8 cm circles.
