Classic vanilla pastry cream is a thick custard used to fill éclairs, layer cakes or tarts, and it also works as a simple chilled dessert. The source measures milk, sugar, egg yolks, cornstarch, vanilla sugar and butter. This method first mixes the starch with cold milk, then tempers the yolks with hot milk so they thicken smoothly without scrambling. Whisk constantly over gentle heat and cook until the cream bubbles for a short time. Finish with butter for shine, cover the surface directly and chill before piping or spooning into desserts. Whisk cornstarch with 100 ml cold milk in a small bowl until smooth. Whisk in egg yolks, sugar and salt. Warm remaining 400 ml milk in a saucepan over medium heat until steaming, with small bubbles at the edge. Do not scorch.

Tips

  • Whisk cornstarch into cold milk until smooth.
  • Temper yolks gradually with hot milk.
  • Whisk continuously, scraping the pan corners.

  • If cream seems loose, return it to the pan and cook until bubbling while whisking.
