This eggless carrot cake uses kefir and baking soda to help the crumb rise and stay moist. Finely grate the carrots so they distribute evenly, and combine the wet and dry ingredients only until no flour remains. Walnuts and raisins are optional additions from the source. Bake in one round or square pan and let the cake cool before slicing so its tender structure can set. Heat oven to 180°C (350°F). Grease and line a 23-cm round cake pan. Whisk kefir, sugar, oil and vanilla until sugar begins to dissolve. Stir in grated carrot. Whisk flour, baking powder, baking soda, cinnamon and salt in a separate bowl. Fold dry ingredients into wet just until combined. Fold in walnuts and raisins if using.
