A no-bake chilled cake with colourful jelly cubes set in a sweet sour-cream mixture over a biscuit base.

Broken glass jelly cake is a chilled, no-bake dessert made with colourful jelly cubes, a sweet sour-cream mixture and a biscuit base. Prepare each jelly flavour separately and let it become fully firm before cutting it into cubes; this keeps the colours distinct when the pieces are folded together. For the base, crushed biscuits are mixed with melted butter, pressed into a cake tin and chilled, although the recipe also allows a sponge layer. Gelatin is soaked in water and warmed gently until dissolved, never boiled, then stirred into the sweetened sour cream. Once assembled, the cake needs several hours in the refrigerator to set before slicing. Plan the setting and chilling time ahead, and keep the finished dessert cold until serving. The result is a creamy cake with bright jelly pieces visible through each portion.

How to tell when it is ready

The jelly cubes must hold their shape before folding. After the final chill, the cream layer should be firm enough to cut clean slices.

Tips

  • Prepare each jelly flavour separately and chill it until fully firm before cutting.
  • Crush the biscuits finely and mix them evenly with the melted butter for the base.
  • Soak the gelatin first and warm it gently; do not let it boil.
  • Fold the jelly cubes into the cream mixture carefully, then chill the assembled cake until firm.

Troubleshooting

  • If the cubes dissolve into the cream, let the jelly set completely and cool the dissolved gelatin before folding.
  • If the cake is soft after chilling, leave it in the refrigerator longer before unmoulding.

Substitutions

  • Use the listed sponge base instead of the butter-biscuit base if you want a softer bottom; do not add butter to the sponge version.

Serving suggestions

  • Serve well chilled so each slice keeps its shape.
  • Add fresh berries beside each portion for a tart contrast.
  • Cut small squares for a dessert platter.
  • Offer tea or coffee with the cake.

Make ahead

Set the different jelly flavours in advance. Assemble the cake only after the cubes are firm and allow the full final chilling period.

Storage

Keep covered in the refrigerator and return leftovers to the cold promptly after serving.

Allow enough chilling time for the cake to set before slicing.
