Slow-Braised Beef Bourguignon with Bacon and Red Wine
Slow-braised beef with bacon, red wine, carrots, garlic and herbs.
This French-inspired beef stew braises beef with bacon, red wine, carrots and aromatics until fork-tender. Heat oven to 160°C (325°F). In a Dutch oven, cook bacon until browned. Remove. Brown beef in batches in rendered fat and oil. Add onions and carrots; cook 5 minutes. Stir in garlic and tomato paste. Return bacon and beef. Add wine, broth, bay and thyme. Bring to a simmer, cover and braise in oven 2 1/2 to 3 hours until beef is fork-tender.
