Yeast Doughnuts with Optional Jam Filling
Pillowy yeast doughnuts that can be filled with jam or dusted with powdered sugar.
These soft yeast doughnuts are made with milk, eggs and butter, then fried until evenly golden. Let the cut rounds proof until puffy and keep the oil near 175°C (350°F) so the centres cook without darkening the crust too quickly. Combine flour, sugar, yeast and salt. Add milk, eggs and melted butter; knead 8 minutes until smooth. Cover and rise 60 to 90 minutes until doubled. Roll dough 1.5 cm thick. Cut rounds, place on a floured tray and proof 15 to 20 minutes until puffy. Heat oil to 175°C (350°F). Fry a few at a time for 2 to 3 minutes per side until deep golden and cooked through. Drain on a rack. Fill cooled doughnuts with jam if desired or dust with powdered sugar.
