Cottage Cheese Pastries with Shortcrust
Buttery shortcrust pastries filled with cottage cheese, egg and vanilla.
These shortcrust pastries hold a gently sweet cottage cheese filling. Keep the butter cold when making the dough and drain the cheese well, then bake until the pastry is pale gold and the filling is set. Rub cold butter into flour, baking powder and salt until crumbly. Mix in sugar and egg just until dough forms. Chill 30 minutes. Mix cottage cheese, filling sugar, egg and vanilla until combined. Heat oven to 180°C (350°F). Roll dough 4 mm thick and cut 10 cm rounds. Add filling to one half and fold over, leaving edge partly open. Place on a lined tray and bake 20 to 25 minutes until lightly golden and filling is set.
