These fresh spring rolls wrap rice noodles and crunchy vegetables in softened rice paper. Prepare all fillings first, dip each wrapper briefly in warm water, then roll snugly with the sides tucked in. Cook vermicelli according to package directions. Drain, rinse under cool water and cut into shorter lengths. Arrange cabbage, carrot, cucumber, pepper, avocado, herbs and noodles within reach. Fill a shallow plate with warm water. Dip one rice paper wrapper briefly until pliable, then lay flat on a clean board. Place a small amount of noodles and vegetables across the lower third. Fold bottom over filling, tuck in sides and roll firmly. Repeat. Serve immediately with soy sauce or refrigerate covered with a damp towel for up to 2 hours.
