Jump to Recipe

Semifreddo is a soft Italian frozen dessert that can be made in a loaf pan without an ice-cream machine. The source’s mixed content combines a frozen dessert with unrelated recipe-style material, so this version uses a clear chocolate base of whipped cream and a cooked egg-yolk sabayon. Fold gently to keep the mixture airy, freeze until firm, and let it stand briefly before slicing. Toasted nuts add crunch; omit them or use a different nut if needed. Line a 900 g loaf pan with plastic wrap, leaving overhang. Melt chocolate gently and cool until fluid but not hot. Whisk yolks, sugar and water in a heatproof bowl over barely simmering water until thick and 71°C (160°F). Remove and beat until cool and voluminous.
