Danish Risalamande with Cherry Sauce
Danish Christmas rice pudding folded with whipped cream and almonds, served with warm cherry sauce.
Risalamande is a Danish Christmas dessert made by folding whipped cream and chopped almonds into chilled rice pudding, then serving it with cherry sauce. The source uses sour cream in place of whipped cream and ground almonds, both of which change the classic texture. This version simmers short-grain rice slowly in milk, chills it completely, then folds through vanilla, almonds and softly whipped cream. A whole almond is traditionally hidden in the bowl for a small gift, but mention it clearly to guests. Keep the dessert chilled until serving. Combine rice, milk, salt and split vanilla bean in a heavy saucepan. Bring just to a simmer, then cook very gently 35 to 45 minutes, stirring often, until rice is tender and thick.
