Thin potato slices and pieces of pork bake under a sour cream, garlic and cheese topping. Cover the dish while the potatoes soften, then uncover it to colour the cheese. A thermometer checks the pork in the thickest piece; a knife through the center tells you whether the potatoes are ready. Cut the meat in small, even pieces so it finishes alongside the potatoes. Heat oven to 180°C (350°F). Slice peeled potatoes 5 mm thick, slice pork thinly, and cut onion and carrot. Oil a 23 by 33 cm baking dish; layer potatoes, pork, onions and carrot. Season evenly. Stir sour cream, mayonnaise and garlic; spread over the top and sprinkle cheese.
