Kefir and a little baking soda make a quick, tender dough for these pan-cooked cheese breads. Seal the suluguni filling inside, flatten gently and cook over moderate heat so the dough cooks through as the cheese melts. Mix flour, salt and baking soda. Add kefir and knead until soft and elastic. Cover and rest 20 minutes. Mix grated cheese with egg. Divide into 6 portions. Divide dough into 6 balls. Roll each into a circle, add cheese filling, gather edges over filling and pinch closed. Flatten gently. Heat a lightly oiled skillet over medium-low heat. Cook each bread 4 to 5 minutes per side, covered, until browned and cheese is melted.
