This eggnog gently cooks egg yolks with milk and cream to make a smooth custard drink, then chills it before serving. The source separates and whips raw egg whites; this version omits that step and heats the egg base to a safe temperature. Add cinnamon and nutmeg while the mixture is warm, then stir in optional spirits after cooling. Serve very cold with freshly grated nutmeg.
