Quick-Cooked Green Peas for Salads or Freezing
Fresh peas briefly blanched and seasoned for immediate or refrigerated use, with no unsafe shelf-canning claim.
Fresh green peas make a useful salad ingredient when they are cooked only until tender and still bright. The source describes sealing peas in jars after a short water bath, but peas are a low-acid vegetable and that method is not suitable for shelf storage. Here the source peas become a ready-to-use refrigerated side. Blanch the shelled peas, drain them well and season with a modest amount of salt and lemon just before serving. Fold them into Olivier salad after they have cooled, or serve warm with butter and herbs. For a longer supply, freeze the blanched peas instead of sealing them in pantry jars.

Wash and measure ingredients ahead; keep perishable ingredients refrigerated until cooking.
Storage
Refrigerate cooked peas up to 3 days or freeze for longer storage.
Food safety
Do not use the source’s 10–15-minute boiling-water treatment for shelf-stable green peas. Low-acid peas require a tested pressure-canning process.
