Steamed Transcarpathian Potato Dumplings
Soft potato dumplings with butter and milk, served with herbs or gravy.
These Transcarpathian-style potato dumplings start with mashed potatoes, butter, milk, egg and flour. Mix just until a soft dough forms, shape small dumplings with lightly floured hands and steam until cooked through. Boil potatoes in salted water 15 to 20 minutes until tender. Drain thoroughly. Mash potatoes with butter and warm milk until smooth. Cool until just warm. Beat in egg and salt. Fold in flour gradually until a soft, slightly tacky dough forms. Avoid overmixing. With floured hands, shape into 16 small balls. Steam in a covered steamer over simmering water 10 to 12 minutes, until set and cooked through. Serve hot with herbs and optional gravy.
