Herb-Roasted Capon with Lemon, Garlic and Thyme
Golden herb-roasted capon with lemon, garlic, rosemary and thyme.
This holiday capon is rubbed with olive oil, rosemary and thyme, then roasted with lemon and garlic aromatics. Roast on a rack and use a thermometer in the thickest part of the thigh to confirm safe doneness. Thaw capon in refrigerator if frozen. Remove giblets, pat dry and place on a rack in a roasting pan. Mix olive oil, salt, pepper, dried rosemary and thyme. Rub over the bird. Put garlic, lemon halves and fresh herbs loosely in cavity. Refrigerate uncovered overnight if desired. Heat oven to 180°C (350°F). Roast capon breast-side up, basting occasionally, about 2 to 2 1/2 hours depending on size. Tent loosely with foil if browning too quickly. Measure the thickest thigh without touching bone; roast until it reaches 74°C (165°F). Check stuffing cavity is empty of aromatics before carving.
