Meringue Mushrooms with Chocolate and Cocoa
Meringue mushrooms are edible decorations made from dried egg white foam, not actual mushrooms.
Meringue mushrooms are edible decorations made from dried egg white foam, not actual mushrooms. Their caps and stems bake separately and are joined with a small dab of chocolate. A Swiss-style warming stage dissolves the sugar before whipping and gives a glossy mixture for piping. The finished pieces need to be dry all the way through. Humid air makes meringue sticky, so keep the cooled decorations in a sealed container and add them to moist cakes close to serving.

Meringue Mushrooms with Chocolate and Cocoa
Equipment: Heatproof bowl, mixer, thermometer, two trays, piping bag with round tip.
Ingredients
Instructions
Heat the whites
Heat oven to 100°C (210°F) and line two trays. Combine whites and sugar in a clean heatproof bowl over simmering water without touching it. Whisk until sugar dissolves and mixture reaches 71°C (160°F).
Whip
Remove from heat, add cream of tartar and salt, then beat until stiff glossy peaks form and the bowl cools.
Pipe
Pipe 24 rounded caps about 3 cm wide and 24 upright stems about 2 cm tall with a round tip. Smooth cap points with a barely damp fingertip.
Dry
Bake 90 minutes, rotating trays if needed, until pieces lift cleanly and are dry throughout. Extend drying if sticky. Turn off oven and leave inside 45 minutes.
Assemble
Cool completely. Melt chocolate gently, dab beneath each cap and attach a stem. Set upside down for 15 minutes until firm. Dust lightly with cocoa. Total includes oven cooling and chocolate setting.
Doneness checks
Meringue reaches 71°C (160°F) during warming, then dries fully and lifts cleanly after baking.
Helpful tips
- Use a bowl free of grease and yolk traces.
- Check sugar has dissolved before whipping.
- Pipe stems short enough to support the caps.
- Dry fully and cool before applying chocolate.
Troubleshooting
- They may be underdried or have absorbed humidity. Dry thoroughly and seal only after complete cooling.
- Dry fully and cool before applying chocolate.
Serving ideas
- Use to decorate a yule log cake.
- Add to a dry cookie platter.
- Serve a few beside coffee.
- Place on frosted cakes shortly before serving.
Substitutions
Lemon juice can replace cream of tartar in a separately tested formula; do not assume the same volume. Milk chocolate can replace dark chocolate as the joining material.
Variation
Keep the caps plain white instead of dusting with cocoa for a cleaner look.
Make ahead
Pipe, dry and assemble a day ahead. Store sealed until decorating time.
Storage and reheating
Keep completely dry mushrooms airtight in a cool dry place for up to 3 days for quality. Refrigeration can introduce humidity; once placed on a cream cake, follow that cake’s refrigeration rules.
Food safety
Warm egg whites with sugar to 71°C (160°F), then dry fully. Keep hot bowls and sugar away from children.
Frequently asked questions
Why are the mushrooms sticky?
