Kouign-amann is a Breton laminated pastry layered with butter and sugar, baked until deeply caramelized. The source’s dough method incorrectly mixes butter into the base dough and gives unclear lamination directions. This version uses a simple yeast dough, cold butter for the folds and sugar during the final turns. Keep the dough and butter cool so the layers remain distinct, and chill whenever the butter starts to soften. The pastries are very hot and sticky straight from the oven; let them cool briefly before handling. Mix flour, yeast, salt and water into a smooth dough. Knead 5 minutes, cover and chill 30 minutes. Roll dough to a rectangle. Place butter in the centre and fold dough over to enclose it; pinch seams closed.

Instructions

  1. Make dough

Mix flour, yeast, salt and water into a smooth dough. Knead 5 minutes, cover and chill 30 minutes.

  4. Shape

Heat oven to 200°C (400°F). Butter a 12-cup muffin tin. Roll dough to about 1 cm thick, sprinkle with remaining sugar, fold and cut into 12 squares. Fold corners toward centre and place in tin.

  5. Proof

Cover and let pastries rise 30 to 40 minutes until slightly puffy.

  6. Bake

Bake 30 to 35 minutes until deeply golden and caramelized. Cool 10 minutes, then carefully remove from tin.
