These zucchini fritters combine grated zucchini with egg, flour and cheese for crisp pan-fried patties. Salt and drain the zucchini first, then fry small portions in a thin layer of oil until browned on both sides. Toss grated zucchini with half the salt. Rest 10 minutes, then squeeze firmly in a clean towel to remove excess liquid. Beat eggs in a bowl. Stir in zucchini, flour, cheese, dill, remaining salt and pepper. Warm a thin layer of oil in a skillet over medium heat. Drop 2 tablespoons batter per fritter into the pan and flatten slightly. Fry 3 to 4 minutes per side until golden and cooked through. Work in batches. Drain briefly on a rack or paper towel and serve warm.
