Turkey kotlety with mushroom filling have a tender meat exterior and a separate savoury centre.

Turkey kotlety with mushroom filling have a tender meat exterior and a separate savoury centre. This all-turkey version uses breadcrumbs to hold the mixture and a cooked mushroom filling without buckwheat. Keep the filling dry and cool before shaping, otherwise steam and moisture can open the seam. Damp hands make the soft turkey mixture easier to work with. The patties need moderate heat: a dark crust does not prove that the centre has reached a safe temperature.

Ingredients

Instructions

  1. Make the filling

Heat 1 tbsp oil and cook mushrooms with diced half-onion 10–12 minutes until dry. Season with 1/4 tsp salt and cool 15 minutes.

  2. Mix turkey

Combine turkey, grated half-onion, garlic, egg, breadcrumbs, remaining salt and pepper. Divide into 8 equal portions.

  3. Enclose filling

With damp hands flatten a portion, add one eighth of the mushrooms and fold the edges over. Seal completely, flatten gently to about 2 cm thick and dust lightly with flour.

  4. Cook in batches

Heat remaining oil over medium heat. Cook patties 5–6 minutes per side, partly covered, until golden and 74°C (165°F) at the centre. Reduce heat if browning too quickly.
