Lasagna stuffed shells hold a beef, ricotta and spinach filling inside individual pasta cups.

Lasagna stuffed shells hold a beef, ricotta and spinach filling inside individual pasta cups. Marinara keeps the edges moist, while mozzarella forms a soft melted top. The shells are partly cooked before filling so they finish in the oven without collapsing. Prepare a few spare shells because some can tear in boiling water. Filling them with a small spoon is easier than forcing in too much at once. A short rest after baking lets the hot cheese and filling settle before you lift out portions.

Instructions

  1. Boil pasta

Heat oven to 190°C (375°F). Cook shells 2 minutes less than package directions, drain and spread on a tray.

  2. Cook filling

Heat oil in a skillet, soften onion 5 minutes and add beef. Cook 7–8 minutes, breaking it up, until 71°C (160°F). Add garlic and spinach; stir 2 minutes until wilted. Cool 5 minutes.

  3. Mix and fill

Stir ricotta, egg, 75 g mozzarella, parsley, salt and pepper into the meat. Spread 200 g marinara in a 23 × 33 cm dish. Divide filling among 24 shells and arrange open-side up.

  4. Bake

Cover shells with remaining sauce and mozzarella. Cover with foil and bake 30 minutes, then uncover 10 minutes until bubbling and the centre reaches 74°C (165°F). Rest 10 minutes.

Make ahead

Assemble a day ahead and refrigerate; cold shells may need 10–15 minutes longer covered baking.

Storage and reheating

Refrigerate up to 3 days. Freeze cooled portions up to 2 months. Reheat covered with a little sauce to 74°C (165°F).

Food safety

Use clean utensils and wash produce. Keep perishable ingredients refrigerated at 4°C (40°F) or below. Refrigerate perishable leftovers promptly, within 2 hours, or within 1 hour above 32°C (90°F).
