One-Pot Buckwheat and Pork with Carrot

One-pot buckwheat and pork combines nutty groats with a browned meat base and sweet grated carrot. The grains should be separate and tender, with enough moisture to feel comfortable to eat but no broth pooled underneath. Roasted buckwheat, sometimes labelled kasha, suits this method; green unroasted groats behave differently. Toasting the drained groats briefly improves their aroma. The covered rest lets the remaining liquid settle through the grains before they are mixed with the pork.
