Beef Stroganoff with Mushrooms and Mustard
Tender beef and mushrooms in a creamy mustard tomato sauce.
This beef stroganoff sears thin strips of beef before simmering briefly with mushrooms, mustard, tomato and cream. Cook in batches to brown the meat, then add cream over low heat to prevent curdling. Pat beef dry. Heat oil in a large skillet over high heat and sear beef in batches for 1 minute per side. Transfer to a plate. Reduce heat to medium. Cook onion and mushrooms 6 to 8 minutes until softened and browned. Stir in tomato paste, mustard powder, salt and pepper. Add cream and simmer gently until slightly thickened. Return beef and juices to pan; warm 2 to 3 minutes without boiling. Stir in butter and optional ketchup or soy sauce. Garnish with dill.
