Kryzhavka is a colourful cabbage-and-beet pickle served beside potatoes, meats and other hearty dishes. This version is prepared specifically for the refrigerator: cabbage wedges and sliced beets sit in a warm vinegar brine with garlic, bay leaves and peppercorns. Its vinegar-to-water ratio is stronger than the old article’s mixture, and the jars go into the refrigerator after filling. Prepare clean jars before heating the brine, leave room to cover every vegetable piece and divide the batch if one jar is too small. Wait one to three days for the flavour to develop, then serve chilled. The jars are for short-term refrigerated use and must not be canned or stored in a pantry.

  1. Prepare vegetables

    Wash and cut cabbage into bite-size pieces or small wedges. Peel and thinly slice beets, and peel and lightly crush garlic cloves. Pack into clean refrigerator-safe jars, leaving space for brine.

  2. Heat the brine

    Bring 500 ml water, 500 ml vinegar labelled 5% acidity, salt, sugar, bay leaves and peppercorns to a simmer. Stir until salt and sugar dissolve.

  3. Cover and chill

    Pour the warm brine over the vegetables to submerge them completely. If necessary mix extra brine with equal parts water and 5% vinegar; never top up with plain water. Cover and refrigerate promptly at 4°C (40°F) or colder. Divide the batch between clean jars and keep every piece submerged.

  4. Serve chilled

    Leave in the refrigerator for 1–3 days for flavour to develop. Use a clean fork to serve. Keep continuously refrigerated; do not can or store these jars at room temperature.
