  1. Toast bread

    Dry the bread cubes at 180°C for 10–15 minutes until browned but not burnt.

  2. Steep

    Pour previously boiled water cooled to 30–35°C over the toasted bread in a clean food-grade vessel.

  3. Add yeast

    Bloom yeast with 1 tsp of the measured sugar in a little warm liquid for 10 minutes; add yeast, remaining sugar and optional chicory.

  4. Ferment

    Cover with breathable clean cloth and leave 12–24 hours; taste for a mild tang and strain through a clean sieve.

  5. Bottle cold

    Pour into clean pressure-rated bottles, add optional raisins, leave headspace, refrigerate immediately and open over a sink with care.
