This classic herring forshmak blends salted herring with hard-cooked eggs, onion, softened bread, butter and apple for a savory spread with a little sweetness. Remove every visible bone, pulse the ingredients to a coarse paste and chill before serving. Break bread into pieces, cover with milk for 3 minutes, then squeeze out excess liquid. Check herring fillets carefully for pin bones and remove any found. Cut into chunks. Add herring, eggs, onion, bread, butter and optional apple to a food processor. Pulse until combined but still slightly textured. Add pepper and optional lemon juice. Taste before adding salt because herring is already salty. Cover and refrigerate at least 1 hour. Spoon onto rye bread or crackers and keep chilled until serving.
