Jump to Recipe

This crisp cauliflower pickle is flavored with garlic, mustard seed, coriander, bay and sweet pepper. The original recipe fills sterilized jars but does not include a canning process; this version is a refrigerator pickle, not a pantry preserve. Briefly blanch the florets, cover them with hot brine and chill until the flavor develops. Wash cauliflower and divide into bite-size florets; slice bell pepper and garlic. Boil florets 2 minutes, then drain and cool quickly in cold water; drain well. Bring vinegar, water, sugar, salt and spices to a boil; stir until dissolved. Put cauliflower, pepper and garlic into clean heat-safe jars; pour hot brine over vegetables to cover. Cool briefly, close jars and refrigerate within 2 hours; wait 24 to 48 hours before serving.
