Kutia is a sweet wheat-berry dish associated with Ukrainian Christmas meals.

Kutia is a sweet wheat-berry dish associated with Ukrainian Christmas meals. The grains remain pleasantly chewy, and ground poppy seeds give the honey dressing body and a distinctive nutty flavour. This dairy-free version cooks the wheat in water and finishes it without a long oven stage. Soaking makes the grain easier to cook, but the exact time still depends on the wheat variety. Taste several berries before draining; a hard centre will not become tender merely by sitting in honey.

Ingredients

Instructions

  1. Soak the wheat

Rinse wheat berries, cover with ample cold water and refrigerate 8 hours or overnight.

  2. Simmer until tender

Drain, add to a pot with the litre of fresh water and salt, then simmer covered for 75–110 minutes until tender with a little chew. Add hot water as needed and drain excess.

  3. Prepare the seeds

Simmer poppy seeds in their 240 ml water for 10 minutes. Rest covered 20 minutes, then drain through a fine cloth-lined sieve. Grind in a suitable spice grinder or pound until the seeds release pale milk.

  4. Finish the kutia

Mix warm wheat with ground seeds, honey, walnuts and raisins. Add a spoonful of hot water if too dense and let stand 10 minutes before serving.

Helpful tips

  • Soak grains in the refrigerator.
  • Keep wheat covered with liquid.
  • Grind softened poppy seeds rather than leaving them whole.
  • Add honey after the grain cooks.

Troubleshooting

  • It will need longer cooking and may cook unevenly. The stated timing includes an 8-hour soak.
  • Keep wheat covered with liquid.

Serving ideas

  • Serve in small festive bowls.
  • Offer warm or chilled.
  • Pair with dried-fruit compote.
  • Finish a meal with a modest portion.

Substitutions

Use almonds instead of walnuts. Maple syrup is a nontraditional honey substitute and changes the flavour.

Variation

Add 40 g chopped dried apricots with the raisins for a fruitier version.

Make ahead

Soak wheat the previous evening. Cook wheat and prepare poppy seeds ahead, refrigerating them before mixing.

Storage and reheating

Refrigerate promptly in a shallow container for up to 3 days. Freeze up to 1 month; thaw in the fridge and loosen with a little warm water.

Food safety

Soak wheat in the refrigerator and chill cooked grain promptly. Use clean grinding equipment. Honey is unsuitable for infants under 12 months.

Frequently asked questions
