Creamy Lobster Risotto with White Wine and Parmesan
Creamy arborio risotto with lobster, white wine, butter and Parmesan.
This lobster risotto slowly absorbs warm stock into creamy arborio rice, finished with butter and Parmesan. The source includes an unrelated honey and dill sauce; those additions are omitted to keep the dish balanced and true to a classic lobster risotto. Keep stock in a saucepan over low heat. Heat oil and half the butter in a heavy pan. Cook onion 4 minutes; add garlic for 30 seconds. Stir in rice for 1 minute. Add wine and stir until nearly absorbed. Add warm stock one ladle at a time, stirring often and waiting until mostly absorbed before adding more, about 18 to 22 minutes. Fold in lobster and cook until steaming hot. Stir in remaining butter, Parmesan and pepper; serve immediately.
